Cranberry Oat Bran Muffins


makes 1 dozen muffins

1-1/2 cups flour
1/2 cup oat bran
3/4 tsp salt
1/3 cup sugar
3 tsp baking powder
2 eggs
1/4 cup vegetable oil
1 cup milk
1 cup chopped cranberries
1 cup chopped nuts
1 tsp grated orange peel


Preheat oven to 400 degrees. Mix flour, oat bran, salt, sugar and baking powder. Set aside. Beat together eggs, vegetable oil and milk; add to dry ingredients. Add cranberries, nuts and orange peel. Stir all together, batter may be lumpy. Pour into muffin tins and bake 20 minutes at 400 degrees.
