Blueberry Salsa


serves 6

2 cups coarsely chopped fresh Sun Belle blueberries
1 cup whole fresh Sun Belle blueberries
1/4 cup fresh lemon juice
2 tablespoons chopped fresh cilantro
2 seeded and minced jalapeño peppers
1/3 cup diced red bell pepper
1/4 cup chopped onion
1/2 teaspoon kosher salt
1 sliced advocado


1. In a large bowl, mix chopped fresh blueberries, whole blueberries, fresh lemon juice, chopped fresh cilantro, seeded and minced jalapeño peppers, diced red bell pepper, chopped onion, and teaspoon kosher salt.

2. Stir until ingredients are completely mixed.

3. Place avocado slices on top prior to serving.

4. Cover and chill until ready to serve with warm tortilla chips.

Option: Serve as tasty side dish with fish or grilled meats.
